Delicious and Easy Baked Flan Custard.

Preheat oven to 350 degrees. Pour granulated sugar into a medium saucepan on medium high heat. Stir continuously until sugar is completely melted.

Pour the liquified sugar into the bottoms of 8 ramekins. The ramekins in the photo are 4 ounces. The sugar will harden almost immediately and will liquify again during the baking process making the sauce that flan is known for.

Beat together 4 whole eggs, 4 egg yolks, 2 cans of evaporated milk totaling 24 ounces and 1 1/2 teaspoons of vanilla extract.

Fill your ramekins with the custard mixture and place them in a large oven safe baking dish with 2 inches water coming up the sides of the ramekins. Bake until the custards are firm in the middle, about 45 minutes.

Allow the custards to cool enough to put in the refrigerator. Refrigerate for an hour then serve.

To remove the flan from the ramekin, insert a sharp knife between flan and the ramekin. You should see some of the sauce starting to come out, that's a good thing! Turn the ramekin upside down onto a serving plate. Caramel will top the flan.
