Every summer while I was growing up, we went camping to June Lake California and Lake Tahoe. My dad made this recipe every time we went.



If using an oven, preheat to 375 degrees. In a Dutch oven fry breakfast sausage. Set aside on a plate with a paper towel and allow sausage to drain. Keep the grease in the Dutch oven for frying the potatoes.


Add diced potatoes, onions and peppers to the Dutch oven, cooking until golden brown and fork tender. salt and pepper to taste.

Add the sausage back to the Dutch oven on top of the potatoes. Beat eggs together and pour eggs on top of the sausage and potatoes. Sprinkle with shredded sharp cheddar cheese.




Bake in oven or campfire with lid on until eggs are cooked and set. Enjoy! This recipe pairs nicely with our Buttermilk Biscuits.
