Directions
In a medium skillet add 2 teaspoons of olive oil and heat on medium heat. Add 1/4 cup shallots and sauté flour a few minutes. Add 1/4 cup chopped Sundried tomatoes and stir. Add orzo to skillet.
Add 1/4 cup dry white wine, 1 cup Chicken broth, and 3/4 cup heavy cream or half and half. Bring to a boil, reduce heat and simmer COVERED for about 15-18 minutes stirring occasionally until pasta is the desired consistency.
10 minutes before orzo is done start salmon. Pat salmon dry with a paper towel and salt and pepper both sides.
In a medium skillet add 2 tablespoons of butter, heat on medium until butter melts. Add salmon to the pan sprinkle with dill weed. Sear the outside and cook till the internal temperature reaches 145.
Lastly add 1/4 cup grated Parmesan cheese and a cup of sweet peas to the orzo and stir.
Plate your dish and serve. Enjoy!
