Loaded mashed potatoes with 2 cheeses, bacon, green onions, garlic & more!

Equipment needed: 2 quart baking dish

Peel, boil or bake potatoes. If using a ricer, no need to peel. I boiled Yukon Gold potatoes in these photos but living in Northern Idaho I have used reds and Russets many times and all of them will work just fine for this dish.

While potatoes cook make bacon. Fry bacon till golden brown, chop and set aside.



In a large bowl mash cooked potato. Add butter and cream cheese.



Next add 1 cup of cheddar cheese and mix. Chop 5 pieces of bacon and add them to the potatoes. Then add garlic powder, milk and sour cream. Mix by hand or with a handheld electric mixer until fluffy and combined.

Spoon mixture into a 2-quart baking dish.


Sprinkle the remaining 1 cup of shredded cheddar cheese, 2 pieces of chopped bacon and green onions on top. Bake at 350 degrees for 12-15 minutes or until potatoes are hot and cheese is melted.

Serve and enjoy!
