Shrimp & Veggie Udon Noodles

Quick easy noodle dish full of shrimp and veggies!

    Step1

    Make sauce. In a small mixing bowl combine 3 tablespoons dark soy sauce, 2 tablespoons soy sauce, 1 tablespoon sugar, 4 tablespoons water, 1 tablespoon minced garlic and 2 teaspoons sriracha hot chili sauce.

    Step2

    Prepare vegetables. heat large skillet or wok on medium high heat with 1 tablespoon sesame oil. Add broccoli and stir fry for a couple minutes.

    Step3

    Then add cabbage, snow peas and green onions cooking for a few minutes. then add bean sprouts. Cook till vegetables have softened but are still firm with a little texture and crunch.

    Step4

    In a medium skillet add a tablespoon of sesame oil on medium high heat. Add shrimp to the skillet and sauté for a few minutes. Add a tablespoon or two of soy sauce mixture to the pan and sauté till just cooked.

    Step5

    Make udon noodles. follow directions on udon noodle package. I used the microwave method. If you have never used them, it's super easy and only takes a few minutes.

    Step6

    Add heated udon noodles and shrimp to vegetable mixture. stir fry till combined.

    Step7

    Add sauce and toss till everything is coated.

    Step8

    Remove from heat and serve. Enjoy!
