Delicious slow cooked swiss steak with tomato gravy over rice. My mom made this dish all the time when I was a kid.

    Equipment needed: recommended 6 quart slow cooker, meat tenderizer tool.

    Step1

    Preheat slow cooker on low. In a large bowl combine one 14.5 ounce can of fire roasted tomatoes undrained, 3 ribs of celery finely diced, 1/2 red bell pepper finely diced, 2 tablespoons of tomato paste, 2 cups of beef broth, 1/8 cup red wine, 1 tablespoon garlic powder with parsley, 1/2 large yellow onion finely diced, 3 tablespoons of flour, 2 bay leaves, 1/4 teaspoon ground rosemary, 1/4 teaspoon paprika, salt and pepper to taste. Mix until combined. Set aside.

    Step2

    Trim fat from steak. Pierce both side of steak with a fork then tenderize with a kitchen mallet. This is customary with swiss steak, using tougher cuts of meat. Once tenderized, coat in flour and braise in a pan with olive oil on high heat. Remove steak from pan and place in a slow cooker. Pour tomato gravy mixture over steak and cook for 7-8 hours.

    Step3

    About 20 minutes before steak is done make rice according to directions on package. Remove bay leaves and discard.

    Step4

    Plate dish with a big spoonful of rice and a generous amount of swiss steak and cover with tomato gravy. Enjoy!
