Easy one skillet dinner! Juicy chicken and delicious creamy rice with sun-dried tomatoes.
Ingredients
Directions
Pat chicken dry with a paper towel, salt and pepper both sides.
Add 2 tablespoons of butter to a large skillet on medium high heat. Add chicken to the pan and brown both sides. After brown, remove chicken from pan and set aside, chicken will cook in a later step.
Add the remaining 1 tablespoon of butter to the skillet and add finely diced shallots. Sauté until softened.
Next add chicken broth, white wine and cream to the skillet with the shallots.
Next add in minced garlic, ground rosemary, basil, thyme, oregano, parmesan cheese, sundried tomatoes and 2 cups of dry rice. Stir until combined. Bring to a slight boil, then reduce heat and add chicken back into the pan. Cover and simmer for 25 minutes or until rice is desired consistency.
Make sure to stir frequently during cook time and gently move the chicken around.
Once rice is desired consistency, remove from heat and serve.
