Easy fall festive side dish! Whipped butternut squash with butter, garlic, cracked pepper and freshly grated parmesan cheese.

Preheat oven to 400 degrees. Cover a baking sheet with aluminum foil. Cut butternut squash down the middle end to end and scoop out seed and fibers.
Place squash on prepared baking sheet and rub cut side with 3 tablespoons of butter and sprinkle with a generous amount of salt and pepper.
Place buttered cut side face down on the baking sheet. Bake for 45 minutes to an hour.
Scoop the flesh of the squash out with a spoon and place in a large mixing bowl. Next add 2 tablespoons of butter and garlic. Whip with and electric hand mixer until smooth, creamy and desired consistency is reached.
Serve with some more butter and fresh grated parmesan cheese. Enjoy!
