These are such an easy tasty side dish and if you are like me and have a garden then you probably have some you need to use. These are stuffed with mozzarella cheese, topped with buttery breadcrumbs and roasted in the oven.

Preheat oven to 375 degrees.
Melt 2 tablespoons of salted butter in a microwave safe small bowl. Add 1/4 of breadcrumbs and combine.
Slice tomatoes in half. I used Rio Grand tomatoes from the garden, they are an oblong medium tomato. Roma tomatoes also work well for this. Scoop out some of the membranes and seeds. Fill tomatoes with mozzarella cheese or cheese of your choice and top with buttery breadcrumbs. Place on a baking sheet.
Bake for 10-15 minutes or until top is golden brown. Garnish with freshly chopped parsley. Enjoy!
