In a food processor, combine 8 ounces of cream cheese and 2 1/4 cups of shredded sharp cheddar cheese, pulsing until the mixture is just blended. Add 1/8 teaspoon of smoked paprika, 3 tablespoons of unsalted softened butter, and 1/4 to 1/2 cup of port wine, then pulse again until everything is just combined.
Place the cheese mixture in the refrigerator for 30-40 minutes to allow it to firm up.
Chop the pecans into small pieces and put them in a medium bowl.




Remove the cheese from the bowl and shape it into three balls with your hands. Next, roll each ball in chopped pecans, pressing gently to ensure they adhere.
