Cajun Shrimp Po’Boy

Awesome Po’Boy with layers of flavor & a zesty remoulade sauce with a Cajun kick!

Ingredients

    Directions

    Step1

    Make remoulade. In a small bowl combine sweet pickle relish, mayonnaise and a teaspoon of cajun seasoning.

    Step2

    In another small bowl combine red wine vinegar, 1 teaspoon of sugar, salt and pepper to taste. Roughly chop lettuce and toss with the vinegar mixture.

    Step3

    After shrimp have been shelled, deveined and cleaned. Pat dry with a paper towel. Preheat a large skillet on medium heat, melt 2 tablespoons of salted butter. Sprinkle Cajun seasoning into the pan, about a teaspoon or more. Place the shrimp in the skillet and sauté for 1-2 minutes per side. Remove to a paper towel lined plate and set aside.

    Step4

    Toast French rolls. Assemble sandwich. Spread a generous amount of remoulade sauce on the rolls.

    Step5

    Next add lettuce, sliced tomatoes and Cajun seasoned shrimp. Serve and enjoy!
