Easy superstar appetizer! Seasoned grilled steak, green chilis and loads of pepper jack cheese!

Chop 1 whole chipotle pepper and place in a small bowl. Add in cumin, smoked paprika and mexican oregano, lightly stir. Pat steak dry with a paper towel and rub the chili mixture all over. Place the steak into a Ziplock bag for about an hour or until you are ready to grill it.
Grill the meat until it reaches an internal temperature of 145 degrees. Once the meat is cooked allow to rest for 15 minutes before slicing.
Line a baking sheet with aluminum foil. Turn on stove to broil. Place 2 tortillas on the prepared baking sheet. Drain the can of green chillis and open each of them patting them dry with a paper towel. Layer 2-3 chilis across half of the tortillas. Next layer some slices of beef.
Spread a layer of cheese over the meat.
Fold the tortillas and brush them with olive oil on both sides. Broil them 3-5 minutes on each side, watching them carefully.
Slice them and serve.
Serve with, avocados, guacamole, salsa and sour cream. Enjoy!
