Prepare your ingredients. Crush Graham crackers with a rolling pin or place them in a food processor. Cinnamon is used twice, 1 tablespoon and 2 tablespoons.
Melt white chocolate in the microwave, stir until creamy. Next add in brown sugar, vanilla and 1 tablespoon of cinnamon quickly mixing until combined. Mixture should harden rather quickly.
In a medium bowl combine, 2 tablespoons of cinnamon, graham cracker crumbs and granulated sugar. This is for rolling the truffles in, in the last step.
Melt milk chocolate in the microwave in a medium size bowl. Stir until creamy. Roll out the white chocolate mixture into truffle balls. I sometimes use a tablespoon to help me measure them or just eyeball it. Spread 2 sheets of parchment paper on the counter, 1 sheet for the ones that are finished and 1 sheet for those waiting to be dipped.
Dip one ball at a time covering it in the milk chocolate and allowing the excess to drip off.
Next roll the milk chocolate dipped balls in the graham cracker crumb mixture and set it on the parchment paper.
Allow about an hour in a cool place to firm and set up.
