One pan juicy chicken thighs and fresh oyster mushrooms in a port wine sauce.

Make seasoning. In a small bowl combine basil, dried oregano leaves, garlic powder, smoked paprika, salt and pepper.
Preheat a large skillet on medium high heat. Pat chicken breasts dry with a paper towel. Rub the seasoning into both sides of the chicken. In a hot skillet add 1 tablespoon of olive oil and chicken thighs. Brown chicken on both sides and set aside. Chicken will cook in a later step. No need to wipe pan.
Add another tablespoon of olive oil to the skillet. Next add onions and mushrooms. Sautéing until softened.
Next add in flour cooking for a minute. Then add in port wine, allowing for alcohol to cook of for 3-5 minutes. Then add in vegetable broth and add chicken back to the skillet.
Finish cooking chicken for 10-15 minutes in the sauce also allowing time for the sauce to thicken. Sprinkle with freshly chopped parsley and serve.
