Delicious bread made with Honeycrisp apples, cinnamon, raisins and pecans.

Preheat oven to 350 degrees. Grease with cooking spray a 9 inch X 5 inch loaf pan. Place parchment paper in loaf pan so bread will easily be lifted from pan.

Peel and core apples. Grate/shred 1 cup of apples. In a small bowl combine 2 eggs and 3/4 cup vegetable oil. set aside.

In a large bowl combine 1 1/2 cups flour, 1 cup sugar, 1 1/2 teaspoons ground cinnamon, 1/2 teaspoon of baking soda, 1/2 teaspoon salt, 1/2 cup raisins and 1/2 cup chopped pecans. mix until combined. Add shredded apples. Toss until all of the apple pieces are completely coated in flour and everything is thoroughly combined.

Pour oil and egg mixture into apple mixture and stir till combined.

Then pour into prepared loaf pan. Bake at 350 degrees for an hour or until toothpick inserted in the middle comes out clean.
