Delicious cinnamon apple cake with streusel topping.

Directions
Preheat the oven to 350°F and grease a 9-inch springform pan.
To make the streusel topping, add 1 1/4 cups of flour to a large mixing bowl. Cut in 7 tablespoons of cold cubed butter using a fork or pastry cutter until the mixture has a crumbly pebble like texture. Add 1/2 cup of granulated sugar and mix well. Set aside.
Peel, core, and slice the apples, then set them aside. For larger apple pieces like those in the photos, keep the slices thick, around 1 1/4 to 1 1/2 inches. If you prefer thinner slices, aim for a thickness of 1/2 to 1 inch.
To make the cake, mix 1 1/3 cups of flour, 1 1/4 teaspoons of cinnamon, 2 1/4 teaspoons of baking powder, and 1/2 teaspoon of salt in a large bowl.
In a separate mixing bowl, use an electric mixer to beat 1/2 cup of room temperature butter, 1/2 cup of granulated sugar until combined. Then, add two beaten eggs and mix until the mixture becomes fluffy.


Add flour mixture to the egg and sugar mixture mixing until combined.


Next add 1/2 cup of milk to the cake batter and mix again until combined.
Pour batter into the prepared springform pan and smooth the top.
Add sliced apples to the cake, pressing them into the batter.
Sprinkle streusel topping all over the top of the cake.
Bake for 45 minutes, rotating during baking process. Allow to completely cool before removing from the pan.
Serve and enjoy!
