Mashed potato cakes with green onions, bacon & butter fried until golden brown & served with more bacon!

Directions
Cook bacon. I cook my bacon on a sheet pan in the oven at 400 degrees turning it every few minutes until golden brown. You can also cook it on the stovetop. Finely chop 5 pieces of the cooked bacon and reserve the other strips for serving.

Peel and boil the potatoes. If you have a ricer, you don't need to peel as it does it for you.

Once potatoes are cooked mash them in a large mixing bowl. Add in 2 tablespoons of salted butter and stir.

Next add 1/4 cup of rolled oats, all of the chopped green onions, 1 egg and the 5 chopped pieces of bacon. Stir until combined.


Once everything is stirred, flour your hands and shape the potato mixture into cakes. I use a 1/4 cup for a measuring guide, you can also just eyeball it.


Preheat a skillet, I used cast-iron. Add some canola oil. Fry the potato cakes until golden brown on both sides then place them on a paper towel to drain.

Serve with strips of bacon and baby arugula. Enjoy!
