Chewy, delicious Baileys chocolate chip cookies made with two kinds of chocolate, dark brown sugar, optional toasted pecans, and a splash of Baileys!

There’s something irresistibly indulgent about cookies that feel a little grown-up, and these Baileys Irish Cream Chocolate Chip Cookies are the perfect adult treat to elevate any occasion. Whether you’re serving them alongside a glass of bubbly as the clock strikes midnight on New Year’s Eve, or simply enjoying one with your afternoon coffee, these cookies bring a touch of decadence to everyday moments.
Preheat the oven to 350°F and line a baking sheet with parchment paper. Mix all of the dry ingredients into a medium bowl, 2 1/4 cups of all-purpose flour, 1 teaspoon of baking powder, 1 teaspoon of baking soda, and 1/2 teaspoon of salt.
Using a hand or stand mixer, beat together 1 cup of unsalted butter, 1 cup of packed dark brown sugar, and 1/2 cup of granulated sugar on medium speed for 3-4 minutes until light and fluffy.
Add to the creamed butter and sugars, 2 eggs, one at a time, mixing after each addition.
Add to the wet ingredients 2 teaspoons of vanilla and 3 tablespoons of Baileys Irish Cream Liqueur. Mix until combined.
Slowly mix the dry ingredients into the wet ones until everything is just combined.
Add in the 1 cup of semi-sweet chocolate chips mixing just until combined.
Add in 1 cup of the white chocolate chips again mixing, just until combined.
Lastly add in 1/2 cup of pecans if using, mixing just until combined.
Scoop rounded tablespoonfuls of cookie dough onto the prepared baking sheet and bake for 12-15 minutes, or until golden brown.
Allow to cool on a parchment paper lined countertop or baking rack.
