Baja burger with a beef patty, pepper jack cheese, Pico de Gallo & chipotle mayonnaise.

Make Pico de Gallo. We have a great Pico de Gallo recipe if you need one. Pico De Gallo adds a freshness to the burgers with tomatoes, white onions, jalapeno pepper, cilantro, lime juice and salt.


Make chipotle mayonnaise. In a small bowl combine 1/2 cup of mayonnaise and 1 teaspoon of chipotle powder. Chipotle powder is dried and smoked jalapeno peppers which adds a smoky spice to the mayonnaise and it's super easy to whip up.

Form the hamburger patties. I like to use a hamburger press to form my patties, but hands work perfectly too! Form the ground beef into 1/4-pound patties and salt and pepper if desired. Make an indention in middle of the burger which helps it to not puff up during cooking and make it slightly bigger than your bun as it will shrink during the cooking process.



Heat a griddle, skillet or grill on medium high heat. Today I am using a griddle which is actually my favorite way to cook burgers. Make sure to spray the griddle with a little cooking spray.

Cook the burgers without flipping for a few minutes so that they develop a crust. Cook until internal temperature reaches 160 degrees F.

About 5-6 minutes before the burgers are ready to come off the grill add cheese and toast the buns. Lay the buns cut side down on the griddle and toast them until golden brown.


Assemble the burgers. Add chipotle mayonnaise to the top bun and burger to the bottom bun, then add Pico De Gallo.
