What is a California burrito? The burrito itself is a jumbo flour tortilla filled with carne asada (marinated then grilled steak), guacamole, Pico de Gallo, cheddar cheese, French fries and sour cream. Make marinade. In a medium bowl combine lime juice, finely chopped cilantro, soy sauce, cumin, California style garlic powder, black pepper, salt, olive oil and red wine vinegar. Stir until combined, then pour the marinade into a Ziplock freezer bag. Trim fat off of the meat and discard. Place the meat into the bag with the marinade and seal. Allow meat to marinate for several hours or overnight.

Start making French fries whether they are homemade or frozen. Shred cheese. Grill meat to 145 degrees, allow to rest for 15 minutes then slice. Cut the carne asada into bitesize pieces. The size of the pieces of meat in the burrito are important as you want to get every ingredient in every bite.

Heat tortillas on the grill and assemble. Add meat, Pico de Gallo, shredded cheese, guacamole, French fries and sour cream. Roll the burrito and cut in half showing off the rainbow of fresh ingredients!
