Preheat oven to 350 degrees. In a medium mixing bowl, combine flour, baking soda, baking powder, cloves, cinnamon, salt and oats. Set aside.

In a large bowl with an electric mixer blend softened butter, brown sugar and granulated sugar.

Next add eggs and vanilla extract to the butter and sugar mixture. Mix until combined.

Add flour mixture to the wet ingredients and mix until just combined.


Add carrots mixing until combined. Next add chopped nuts and chopped dates again mixing until combined.

Line a baking sheet or two with parchment paper. With a teaspoon measure out round balls of cookie dough placing them on the prepared baking sheet. Bake at 350 degrees for 13-15 minutes or until cookies are golden brown.

Allow to cool. Enjoy!
