Cherry Almond Cookies

    Step1

    Preheat oven to 375 degrees. Line 2 baking sheets with parchment paper. In a large mixing bowl add shortening and granulated sugar.

    Step2

    Next add in egg, almond extract and preserves. Mix until combined.

    Step3

    In a separate medium bowl, mix together dry ingredients. Flour, baking soda and salt.

    Step4

    Once everything is mixed add in toasted chopped almonds.

    Step5

    Form the dough into 1 tablespoon balls and place on a prepared baking sheet. Bake 12-15 minutes rotating the baking sheets mid-way through so that everything bakes evenly.

    Step6

    Remove from the baking sheet and allow to cool on the counter or baking rack for a few minutes then enjoy!
