Classic Chinese almond cookies are one of those simple pleasures you always seem to get from a good takeout restaurant — golden, lightly crisp, and topped with that single almond in the center. They’re buttery, fragrant, and surprisingly easy to recreate at home, giving you all the nostalgic flavor of your favorite takeout treat with just a few basic ingredients.
Preheat the oven to 350°F and line a baking sheet with parchment paper. With a hand or stand mixer, beat together 1 cup of softened unsalted butter and 1 cup of granulated sugar until fluffy.
Add 1 whole egg to the bowl, along with 1 1/2 teaspoons of almond extract mixing until combined.
In a separate large bowl, mix together 2 cups of all-purpose flour, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt until well combined.
Gradually add the dry ingredients to the wet, mixing after each addition just until combined.
To make the egg wash, whisk 1 egg yolk with 1 teaspoon of cold water in a small bowl. Scoop tablespoon-sized portions of dough, roll them smooth in your hands, and gently flatten them on the baking sheet. For smaller cookies, use a teaspoon instead. Once on the baking sheet, place the desired number of almonds on the cookies and brush them with egg wash for that classic Chinese Almond Cookie shine.
