Corn salad

This is such a great dish. Can be eaten as a side dish, salad, or corn salsa with your favorite chips!

    Step1

    In a medium large saucepan heat to medium heat and add diced bacon. Cook bacon for about 5 minutes until golden brown. Drain bacon and set aside. In the same pan add butter, corn, bell pepper, Anaheim or Poblano pepper, shallots, garlic and paprika. Saute for a few minutes till vegetables soften.

    Step2

    Add half and half and stir. Add bacon back to the pot, stirring and simmering for a couple minutes. Remove from heat.

    Step3

    Serve with a sprinkle of parsley.
