Creamy Sausage Pesto Pasta with Mushrooms & Asparagus

    Directions

    Step1

    Start a pot of water for pasta and cook following the instructions on the packaging.

    Step2

    In a large skillet on medium heat, add 2 tablespoons of olive oil, cut asparagus and sliced mushrooms. Sauté until softened. remove the asparagus and mushrooms from the skillet and set aside.

    Step3

    In the same skillet add Italian sausage. Cook sausage until juices run clear and it is no longer pink. Drain off any fat and wipe skillet.

    Step4

    Return meat, mushrooms and asparagus back to the skillet.

    Step5

    In a medium bowl combine 1/2 cup sour cream, 4 tablespoons of basil pesto and 1/4 cup of parmesan, stirring until combined. Here is a link to our delicious basil pesto recipe Easy Basil Pesto Recipe.

    Step6

    Add the sauce to the meat, asparagus and mushrooms stirring until combined. Add drained pasta to the meat and sauce mixture and toss until everything is coated in the sauce.

    Step7

    Serve and enjoy!
