Simple delicious side dish with potatoes, tomatoes, olive oil, salt & pepper.

Preheat oven to 350 degrees. Bring potatoes to a boil in a medium saucepan. Boil the potatoes for 15 minutes, drain, cut in half and place them in a baking dish. Chop tomato and place them in the dish with the tomatoes. Add 3 bay leaves. Drizzle with olive oil and season with salt and pepper. Toss everything together until well coated. Bake for 25-35 minutes uncovered, stirring occasionally during cooking process.


This side dish goes very well with chicken and fish. Enjoy!
