Rich broth with pork sausage, smoky bacon, potatoes, garlic & fresh herbs. Serve with Irish soda bread for mopping up the wonderful broth!

Preheat oven to 375 degrees. Line a baking sheet with aluminum foil. Bake the Hillshire Farms sausage for 20 minutes, slice into coins and set aside.



While sausage is baking, cook bacon, chop and set aside. Using some of the bacon grease add it to a large Dutch oven or other oven safe pan. Heat on medium heat and add chopped onions sautéing for a few minutes. Next add in potatoes and thyme leaves cooking for a few more minutes.

Next add in baked sausage coins. Reduce the oven temperature to 325 degrees.

Add in bacon, cracked pepper and broth. Bring the mixture to a boil. Put the oven safe pot in the oven covered with a lid. Bake for 25-35 minutes or until potatoes are soft.
