Preheat oven to 400 degrees
Line 2 cookie sheets with parchment paper.

Separate egg. Put egg yolk in medium bowl and beat a few times. Put the egg white in a small bowl with a tsp of water, beat and set aside.

Add cream cheese, sugar, vanilla and lemon juice to the medium bowl with the egg yolk. With a hand mixer blend on medium high until smooth.

Lay out the two puff pastry sheets, one on each cookie sheet. Cut each pastry into 4 even squares. Fold pastry corners and then pastry sides into an octagon type shape. Spoon about two tablespoons of cream cheese into the centers of the 8 pastries. Do not spread cream cheese. Brush the pastries with the egg wash mixture.

Bake for 18-20 minutes until golden brown. Cool slightly and serve.

Danishes pictured have jarred lemon curd with a dusting of powdered sugar, canned blueberry pie filling with a drizzle of powdered sugar glaze (1/4 cup powdered sugar mixed with a tsp milk) and a savory turkey and cheese option (2 pieces folded turkey lunch meat topped with shredded sharp cheddar).
