Quick and easy Barramundi and vegetables, with butter, capers, white wine, fresh lemon juice topped with freshly grated parmesan cheese.

Directions
In a large skillet on medium heat add 2 tablespoons of butter allowing it to melt.
Then add in zucchini and squash. Season with dill, 1/2 the minced garlic, salt and pepper. Sautee until slightly softened and desired consistency. Remove from pan and set aside. No need to wipe pan.
While vegetables cook, pat fish dry with a paper towel, salt and pepper both sides.
After vegetables are done cooking add fish to the skillet with 2 tablespoons of butter. Cook fish for a few minutes, carefully turning it.
Next add in white wine, minced garlic, lemon juice and cappers. Baste fish with sauce. Garnish with freshly chopped parsley.
Plate Barramundi and vegetables. Spoon sauce over fish and sprinkle with freshly grated parmesan cheese. Serve and enjoy.
