This eggnog cake is soft, flavorful, and perfect for the holidays. The cream cheese frosting, infused with eggnog, adds a creamy, tangy layer, while a sprinkle of nutmeg brings a warm, festive finish.
Preheat oven to 350. Spray a 9x13-inch baking pan with a neutral non-stick cooking spray. In a large bowl, mix 1/2 cup of room temperature butter and 1 1/4 cups of granulated sugar. Once the butter and sugar are combined, add in 1 teaspoon of vanilla extract and 3 eggs, one at a time, mixing after each addition.


In another large bowl, mix together 2 1/4 cups of flour, 2 teaspoons of baking powder, and 1/2 teaspoon of salt. Add half of the dry ingredients to the egg and butter mixture, along with half of the 1 1/4 cups of eggnog. Then, mix in the remaining dry ingredients and the rest of the eggnog, stirring until just combined.
Spread the batter into the prepared baking pan. Bake for 30-35 minutes or until a toothpick inserted in the middle comes out with moist crumbs and not wet batter.
Allow the cake to cool completely before frosting.
While the cake cools, prepare the frosting. In a medium bowl, combine 4 ounces of room-temperature cream cheese, 4 tablespoons of eggnog, and 2 cups of confectioners' sugar. Beat with a handheld electric mixer until the frosting is smooth and creamy.
Frost the cake, slice it, and serve.
Garnish with a sprinkle of nutmeg. Enjoy!
