Delicious soup using turkey leftovers! Sage, thyme, onions, celery, carrots, peas and gnocchi will be perfect with your turkey leftovers!
Ingredients
Directions
Prepare vegetables. Dice celery, peel and dice carrots and onion. Mince garlic.
Add a tablespoon of olive oil to a large skillet or soup pot with high sides. Heat on medium and add celery, carrots and onion. Sauté until vegetables soften.
Once vegetables soften add in minced garlic. Sauté for a few minutes then add in 2 tablespoons of flour, cooking and stirring for a couple more minutes.
Next add in 1/4 teaspoon of rubbed sage, 1 bay leaf, 1 teaspoon of dried thyme leaves, salt, pepper and 6 cups of turkey or chicken broth. Stir until combined.
Add in cooked turkey. Bring to a boil, reduce heat and simmer for 15-20 minutes or until vegetables are tender and soup has thickened to desired consistency.
10 minutes before soup is ready, add in potato gnocchi and peas. Break up the gnocchi carefully and simmer for 10 minutes.
Serve with a sprinkle of parsley and enjoy!
