Easy yummy peanut brittle. Made with simple ingredients and only takes 15-20 minutes to make. Makes a bunch, great gift giving idea!

Equipment needed: baking sheet, saucepan, candy thermometer.
Line a baking sheet with parchment paper. In a saucepan on high heat add granulated sugar, water and corn syrup.
Heat to 285 degrees, stirring mixture.
Next add in peanuts and butter stirring constantly until candy thermometer reaches 295 degrees. Remove from heat and quickly add 1 teaspoon of vanilla extract and 2 teaspoons of baking soda. Mix quickly.
Spread peanut mixture as thin as possible on prepared baking sheet. Allow to completely cool then break into desired sizes.
