Pumpkin spice bread with pecans is a moist, delicious, and simple-to-make fall favorite! Serve it with a generous spread of butter, alongside a cup of apple cider or coffee, for an ideal seasonal treat. 🍁
Preheat the oven to 350°F. Line a 9X5-inch loaf pan with parchment paper for easy bread removal and lightly spray it with a vegetable non-stick cooking spray.
In a medium bowl, mix together 3/4 cup of vegetable oil, 2 eggs, and 1 cup of pumpkin.
In a large bowl, mix together 1 1/2 cups of flour, 1 cup of sugar, 2 teaspoons of pumpkin pie spice, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt.
Mix the wet and dry ingredients together, stirring until combined.
Once the wet and dry ingredients are fully blended, gently fold in 2/3 cup of chopped pecans, mixing only until incorporated.
Pour the mixture into the prepared loaf pan, then bake at 350°F for 45-50 minutes or until a toothpick inserted into the center comes out clean.


Let the loaf cool in the pan for 15 minutes, then carefully remove it and place it on a baking rack to cool completely.
