Delicious, caramelized onions, mushrooms, spinach & melted mozzarella cheese with a splash of Worcestershire sauce.

In a large heavy bottom skillet on medium heat add 2 tablespoons of salted butter. Add sliced onions. Sauté onions for 25-35 minutes until very golden brown stirring occasionally.

Once onions are brown add 2 tablespoons of Worcestershire sauce. Allow sauce to evaporate. Then add in mushrooms sautéing until mushroom are cooked. *Preheat broiler*.

Add in the spinach. Sautee until spinach is wilted. Salt and pepper to taste.

Melt 2 tablespoons of butter in a microwave safe dish for basting the quesadillas. Cover a baking sheet with aluminum foil. Place two large tortillas side by side on the prepared baking sheet. Add a generous amount of the vegetable's mixture to one side of the tortillas. See photo.

Add shredded mozzarella cheese on top of the vegetable mixture.

Fold the tortillas shut and baste with melted butter.

Broil the quesadillas until tortillas are golden brown.

Cut the quesadillas with a sharp knife or pizza cutter.
