Gochujang Chicken Lo Mein

    Step1

    If using dehydrated shiitake mushrooms, place them in a bowl of water for at least 30 minutes prior to cooking them.

    Step2

    Trim chicken thighs and cut into 1-inch pieces. Add 1 tablespoon of sesame oil to a large skillet on medium heat. Add chicken to the skillet.

    Step3

    Bring a pot of water to a boil and boil noodles.

    Step4

    Dice green onions, keeping the white and green parts separate. Wash and slice baby bok choy. Quarter mushroom tops and discard stems once they are re-hydrated.

    Step5

    Add mushrooms to the skillet with the chicken and sauté until softened. Add vegetable oil as needed.

    Step6

    Next add in bok choy and white portions of the onions, stir-frying for a couple of minutes.

    Step7

    Add in gochujang paste, water, soy sauce and miso paste. Stir-fry until liquid is evaporated. Remove from heat, drain noodles and toss with chicken and sauce.

    Step8

    Serve with chopped peanuts and dark green portions of the onions. Enjoy!
