It’s incredibly delicious and pairs wonderfully with pork, chicken, and white cheeses. It also makes an excellent base for green chile stews, soups, or even salad dressings. This fresh, vibrant sauce is sure to be a hit!
Combine all the ingredients in a blender: 2 cups of chicken broth, 4 tablespoons of all-purpose flour, 1/2 cup of fresh spinach leaves, 1/2 a yellow onion chopped into chunks, 3 peeled garlic cloves, and 1/2 of a medium to large poblano pepper with the stems, seeds, and membranes removed and roughly chopped. Blend on high until smooth, then pour the sauce into a medium saucepan. Salt to taste.
Heat over medium-high until hot, then lower the heat to a simmer. Let the sauce simmer until it thickens and reduces slightly.
