Grilled Tri-Tip with amazing marinade.

In a small bowl mix together olive oil, Dijon mustard, smoked paprika, pepper, red pepper flakes, lemon juice, salt and cilantro. This marinade is so delicious!


Trim any large fatty areas off of the meat. Place the tri tip in a Ziplock freezer bag with all of the marinade. Make sure the marinade is all over the meat, seal and refrigerate for 24 hours.

Allow the tri-tip to come up to room temperature before grilling so that it cooks even. Preheat the grill to high, then lightly grease the grill with cooking spray. Place the meat over the flame and sear both sides for about 7-10 minutes to lock in the juices. Next turn down the grill to medium heat, cooking for 20-30 minutes turning occasionally. The internal temperature should read 145 degrees F. on a digital thermometer for the meat to be cooked to a safe temperature. To obtain an accurate reading, the food thermometer should always be placed in the thickest part of the food, away from bone, fat or gristle. Cook meat to desired doneness. Allow meat to rest for 15-20 minutes before slicing.
