Decadent soup with deep flavor, toasted crusty bread & bubbling golden brown baked Vermont cheddar cheese.

In a large skillet with high sides or heavy bottom pot add butter and sliced onions. Heat on medium heat, cover stirring occasionally for about 40 minutes.



After 40 minutes remove the lid and increase the heat to medium high. Brown the onions until very deep brown and caramelized. This could take 20-25 minutes.


Once the onions are very golden brown add in flour and fresh thyme leaves. Stir until combined, cooking for a few more minutes.


Next add in about 1 1/4 cups of Guinness Draught Beer and beef broth. Bring to a boil, then reduce heat to a simmer. Cover and stir occasionally for about 45 minutes to an hour.

After an hour preheat your oven to broil. Place oven rack 4 inches from heating element. Fill your oven safe bowls with soup. Its easiest for me to put them all on a baking sheet.

Add shredded white cheddar cheese to the tops of the baguettes. Put the soups in the oven 4 inches under the heating element. Broil until cheese is slightly brown and bubbling.

Serve and enjoy!
