Delicious Yukon Gold Potatoes fried with onions, bell peppers, salt & pepper.

    Step1

    Using a heavy bottom skillet, cast iron works well, add a tablespoon of vegetable oil. Add the potatoes cooking for 5-6 minutes stirring occasionally.

    Step2

    Next add in diced bell peppers and onions. You can use any color of bell pepper you like. I chose white onions for this because they have a sharper more distinct onion flavor. Cook for several minutes testing the doneness of the vegetables. Season to taste with salt and pepper. Also, if you like a little bit of heat, toss in some diced jalapeno peppers. Add vegetable oil as needed.

    Serve and enjoy!
