Preheat oven to 350 degrees. We just harvested our winter crop of parsnips. Honeyed parsnips are just one of the easy ways to enjoy these. Scrub and peel parsnips and trim off the ends. In a medium saucepan bring the cleaned parsnips to a boil. Boil for 5-10 minutes. Then drain the parsnips. If you have larger parsnips, quarter them and follow the rest of the instructions in the recipe.

Lightly grease a shallow baking dish with olive oil. Add the parsnips. Drizzle the parsnips with olive oil and honey. Toss until well coated. Bake for 35-45 minutes stirring occasionally during the baking process. Add a tablespoon or more of honey midway through. Bake until parsnips are a very golden brown and caramelized.
