Tender warm roast beef & melted cheese on a toasted hoagie roll with sauteed onions and au jus.

In a large skillet add a tablespoon of olive oil and sliced onions. Sauté until onions are desired texture. Set aside and start on the bread.
Preheat oven to broil. Butter hoagie rolls on cut side. Toast the hoagie rolls until golden. After the rolls are lightly toasted, add the slices of cheese and put them back into the broiler until cheese is melted. Use the cheese of your choice! I used provolone on one because my husband likes it and swiss for me.
In a medium saucepan heat 2 cups of beef broth. Dip the meat into the broth just long enough to heat it but not cook it. Drain slightly on a paper towel.
Assemble sandwiches. Add a generous amount of warm roast beef on top of the melted cheese, then add onions. Cut in half and serve with dipping Au Jus.
