Sweet carrots elevated by a silky reduction of honey, Irish whiskey, and fragrant ginger.

A glossy glaze of honey, whiskey, and ginger transforms simple carrots into a sophisticated side dish.
In a small bowl, add 1 teaspoon of peeled and grated ginger or ginger puree paste and 1 1/2 tablespoons of honey, whisking until well combined. Season with salt and pepper to taste.
Peel the carrots and slice them diagonally.
In a large skillet over medium heat, melt 2 tablespoons of butter with 1 tablespoon of olive oil.
Add carrots and sauté until they begin to brown, about 8–10 minutes. Once carrots are brown add in honey mixture stirring for a minute.
Deglaze the pan with 2 tablespoons of Irish whiskey and ¾ cup of vegetable broth. Increase the heat and bring the mixture to a boil, stirring frequently. Continue cooking until the liquid reduces and thickens into a glossy, sticky glaze, about 5–7 minutes. Remove from heat and serve.
