Italian sausage, tomato parmesan kale sauce over pasta topped with herbed ricotta cheese.

Directions


Start heating a pot of water for pasta following the cooking instructions on the packaging. Heat a large skillet on medium heat. Add a tablespoon of olive oil, sliced mushrooms, garlic and diced onions. Sauté for a few minutes until tender. Add in Italian sausage cooking until no longer pink. Drain any excess grease.

Next add in tomato paste, 1/2 teaspoon of oregano and vegetable broth stirring until combined.

Add in chopped tomatoes and chopped and stemmed kale. Saute until kale is wilted.

While sauce cooks make ricotta topping. Stir together 1/4 cup of ricotta cheese, 1/4 teaspoon of oregano leaves, salt and pepper to taste.


Add in cooked and drained noodles, parmesan cheese and half and half stirring until combined and noodles are coated with sauce.

Serve Sausage Penne Parma Rosa with a dollop of ricotta herb cheese and enjoy!
