Easy and delicious crumbly shortbread cookies with chocolate and almonds!
Ingredients
Directions
In a large mixing bowl, combine sugars and butter, mixing until smooth. Fold in extracts, stirring until combined.
In a separate bowl combine flour and salt. Using a stand mixer or by hand combine flour mixture with wet ingredients (sugar mixture) a little at a time until completely combined. Next add in chocolate chips and toasted almonds, mixing until just combined.
Form soft dough into 3 logs and refrigerate for a couple of hours.
Preheat oven to 350 degrees and cover baking sheet with parchment paper.
Once dough has been refrigerated and is firm enough to cut, cut into disks and place on prepared cookie sheets. Add peppermint candy sprinkles if desired. Bake for 15-18 minutes or until bottoms of cookies are golden.
Allow to cool on cookie sheet a few minutes before moving so that cookies set up.
