Moist and delicious lemon pudding bread with icing!

Equipment needed: 9x5 loaf pan, parchment paper
Preheat oven to 350 degrees. Grease a 9 inch by 5-inch pan with nonstick cooking spray. Place a strip of parchment paper in the loaf pan so the bread can be easily removed after baking.
In a medium bowl combine 1/2 cup of vegetable oil, 2 eggs and 1 cup of lemon pudding.
In a large bowl combine flour, baking soda, baking powder, sugar and salt.
Pour lemon wet mixture into flour dry mixture and stir.
Pour mixture into loaf pan and bake for 45 minutes to an hour rotating the loaf pan and checking the middle with a toothpick. Bake until inserted toothpick comes out clean.
Allow to cool 15-20 minutes before icing. While bread cools make icing. Combine 1/4 cup of confectioners' sugar with 1 1/2 teaspoons of cold milk and whisk.
Drizzle with icing.
Slice and serve. Enjoy!
