Granita originated in Sicily, Italy, and is semi-frozen with a combination of citrus and herbs. This dessert is made from a mixture of lime juice, mint, sugar, and water that is frozen and then scraped with a fork to create icy crystals then served. This recipe would also be phenomenal with a little vodka added for a fancy, refreshing adult beverage!
In a medium saucepan, combine sugar, lime zest and water. Bring mixture to a boil.


I grow fresh sweet mint in my garden in the spring and summertime it's so refreshing! Once boiling remove from heat and add mint leaves. Allow the mint leaves too steep in the syrup for 15 minutes.
Once the mixture is cool enough to touch, wring out the mint leaves into the syrup. Discard mint leaves or mulch. Pour the syrup through a sieve or mesh strainer and into a freezer-safe container. Place the syrup in the freezer.


Every 30-45 minutes, take the container out of the freezer stirring and scraping the ice. Make sure that the ice is scraped away from the sides of the container.
Serve and enjoy!
