Delicious comfort food side dish casserole!
Ingredients

Equipment needed: 2 quart baking dish
Peel, boil or bake potatoes.
While potatoes cook make bacon. Fry bacon till golden brown and set aside.
In a large bowl mash cooked potatoes. Add butter, cream cheese and 1 cup of cheddar cheese and mix. Chop 5 pieces of bacon and add them to the potatoes. Then add garlic powder, milk and sour cream. Mix with a handheld electric mixer until fluffy and combined.
Spoon mixture into a 2 quart baking dish. Chop remaining 2 pieces of bacon for the topping.
Sprinkle the remaining 1 cup of shredded cheddar cheese, 2 pieces of chopped bacon and green onions on top. Bake at 350 degrees for 12-15 minutes or until potatoes are hot and cheese is melted.
Serve and enjoy!
