Quick, easy and made with simple ingredients! Mascarpone cheese makes the orzo super creamy, and the lobster broth is full of amazing flavor!

Add a tablespoon of butter to a large saucepan. Heat on medium heat and add 1 cup of chopped spinach. Sauté a few minutes until wilted.
Add in orzo and stir.
Next add in lobster broth. I use Better Than Bouillon and it tastes awesome. Turn down the heat to a simmer and cover saucepan with a lid, stirring occasionally for about 10 minutes. Once liquid has absorbed remove from heat and add 2 heaping tablespoons of mascarpone cheese and stir.
Serve with a pinch or parsley for garnish. Enjoy!
