    In a large pot add butter on medium heat. Next add diced Anaheim chilis and onions. I grow my own peppers during grow season and just harvested some Anaheims, poblanos are also perfect for this soup.

    Bring another pot of water to a boil for pasta. Cook according to packaging directions.

    Mexican Street Corn Soup

    Next add to soup pot, 1 tablespoon of chili powder, 1 tablespoon of minced garlic, 1 teaspoon of sugar and 1 teaspoon of Mexican oregano. Stir until combined.

    Next add in chicken broth, lime juice and corn. Mix together 1 1/4 cups of cold cream and 2 tablespoons of flour. Add mixture to the soup. Bring soup to a boil, reduce heat and simmer for 10 minutes allowing soup to thicken. stir occasionally. Just before serving add in 1/2 cup of queso fresco cheese and drained cooked pasta, salt and pepper to taste and stir.

    Serve with a sprinkle of chili powder, queso fresco cheese, chopped cilantro and slices of jalapeno. Enjoy!
