Delicious & easy with seasoned ground beef, 2 cheeses, enchilada sauce, poblano peppers, lettuce & tomatoes with chipotle ranch dressing.

Directions

Preheat oven to broil. Line a baking sheet with aluminum foil and set aside. Mix together seasoning blend. If you already have your seasoning, then skip this step. Add 2 cups of tortilla chips to a Ziplock bag and break them into pieces, this will be one of the pizza toppings after it is cooked, set aside. Remove membranes and seeds of the poblano pepper and dice, set aside.



Brown ground beef in a large skillet and drain off any fat. Once beef is brown add seasoning mix and 3/4 cup of water. Simmer on low stirring occasionally until water has absorbed, then remove from heat.

Make or heat enchilada sauce. We have an excellent Easy Red Enchilada Sauce recipe if you need one.


Make the dressing. In a small bowl combine 1/2 cup of ranch dressing and 1 teaspoon or ground chipotle powder.


Chop romaine lettuce and quarter the tomatoes, adding them to a medium bowl. Add the dressing and toss everything together.





Lay two Naan breads on the prepared baking sheet. Spread two tablespoons of enchilada sauce on the naan and approximately 1/3 cup of shredded cheddar cheese. Sprinkle with diced poblano peppers. Put them in the broiler for 5-6 minutes or until the cheese is golden brown and bubbly and the edges of the naan are starting to brown or slightly char depending on how you like your pizza.

Add seasoned ground beef to the pizzas, both cheeses, the salad mixture to the top and sprinkle with broken pieces of tortilla chips. Serve and enjoy!
